Pad thai is the dish every American kid recognizes โ sweet, salty, tangy, with crunchy peanuts on top. But traditional pad thai is a carb bomb: rice noodles AND palm sugar AND tamarind concentrate. This version keeps the soul of the dish (the sauce!) and uses a half-and-half noodle trick so kids still get the slurpy noodle experience without the glucose spike.

Ingredients
- 4 oz dried flat rice noodles (pad thai noodles) (~85g across all servings)
- 2 packs (7 oz each) shirataki noodles, drained and dry-pan-fried (4g across all)
- 1 lb chicken breast, thinly sliced (0g)
- 3 eggs, beaten (2g)
- 3 cloves garlic, minced (2g)
- 2 cups bean sprouts (6g)
- 4 green onions, cut in 2-inch pieces (3g)
- 1/3 cup chopped roasted peanuts (8g)
- 1 lime, cut in wedges (2g)
- 2 tbsp avocado oil (0g)
Pad thai sauce
- 3 tbsp tamarind paste (8g)
- 3 tbsp fish sauce / nam pla (1g)
- 3 tbsp allulose (replaces palm sugar) (0g)
- 1 tbsp rice vinegar (0g)
- 1 tsp soy sauce (1g)

Sauce + protein + veg base: ~6g per serving. Kid default = 6g + 22g noodles = ~28g total.
Directions
- Soak rice noodles in warm (not hot) water for 30 min until pliable but not soft. Drain.
- Drain shirataki noodles, rinse well, and dry-pan-fry in a hot skillet for 3-4 minutes to remove water. Set aside.
- Whisk all sauce ingredients in a small bowl until allulose dissolves.
- Heat 1 tbsp oil in a wok over high heat. Add chicken, stir-fry 3-4 minutes until cooked. Remove.
- Add remaining oil. Add garlic, stir 15 seconds.
- Push garlic to one side. Pour beaten eggs in. Scramble loosely until almost set.
- Add drained rice noodles. Toss for 1 minute until they soften.
- Add shirataki noodles, cooked chicken, and the sauce. Toss everything together for 2 minutes.
- Add bean sprouts and green onions. Toss 30 more seconds โ sprouts should stay crunchy.
- Plate and top with chopped peanuts and a lime wedge.
