Pad thai is the dish every American kid recognizes โ€” sweet, salty, tangy, with crunchy peanuts on top. But traditional pad thai is a carb bomb: rice noodles AND palm sugar AND tamarind concentrate. This version keeps the soul of the dish (the sauce!) and uses a half-and-half noodle trick so kids still get the slurpy noodle experience without the glucose spike.

Directions

  1. Soak rice noodles in warm (not hot) water for 30 min until pliable but not soft. Drain.
  2. Drain shirataki noodles, rinse well, and dry-pan-fry in a hot skillet for 3-4 minutes to remove water. Set aside.
  3. Whisk all sauce ingredients in a small bowl until allulose dissolves.
  4. Heat 1 tbsp oil in a wok over high heat. Add chicken, stir-fry 3-4 minutes until cooked. Remove.
  5. Add remaining oil. Add garlic, stir 15 seconds.
  6. Push garlic to one side. Pour beaten eggs in. Scramble loosely until almost set.
  7. Add drained rice noodles. Toss for 1 minute until they soften.
  8. Add shirataki noodles, cooked chicken, and the sauce. Toss everything together for 2 minutes.
  9. Add bean sprouts and green onions. Toss 30 more seconds โ€” sprouts should stay crunchy.
  10. Plate and top with chopped peanuts and a lime wedge.
