Green curry is actually milder and more herbal than red โ€” it gets its color from fresh green chilies, cilantro root, and Thai basil pounded into the paste. In Thailand, this is the curry the grandmas make for the little ones. *Gaeng keow wan* literally means "sweet green curry" โ€” sweet from the coconut, not the sugar. Thai families cook this in a big *kratha* (wok) and serve it family-style with jasmine rice โ€” everybody scooping their own. Below, the kid carb math is broken out for your T1D baby.

  1. Scoop the thick cream off the top of one coconut milk can into a deep wok or Dutch oven.
  2. Heat over medium until cream bubbles and starts releasing oil, about 3 minutes.
  3. Add green curry paste. Stir-fry 2 minutes until aromatic and the color deepens.
  4. Add chicken. Toss to coat in paste, cook 4 minutes.
  5. Pour in remaining coconut milk (both cans). Add bai makrut, nam pla, and allulose. Simmer 10 minutes.
  6. Add eggplant (or zucchini), snap peas, and bell pepper.
  7. Simmer another 6 minutes until chicken is fully cooked and veggies are tender-crisp.
  8. Taste โ€” adjust nam pla or allulose to balance salt and sweet.
  9. Turn off heat. Stir in Thai basil leaves so they wilt in residual heat.
  10. Build plates at the table โ€” rice first, then a ladle of curry. Kid's plate first.
