Directions

  1. Make toasted rice powder: heat a dry skillet over medium-low. Add 2 tbsp uncooked jasmine rice. Toast 5-7 minutes, swirling often, until rice turns deep golden brown. Smells like popcorn.
  2. Let rice cool 2 min, then grind in a mortar/pestle, spice grinder, or pulse in a small food processor to coarse sand texture. Set aside.
  3. In a wide skillet, add ground chicken and the 2 tbsp broth/water (this keeps it juicy, no oil needed).
  4. Cook over medium heat, breaking up the meat, 6-8 minutes until fully cooked and most liquid evaporates.
  5. Turn off heat. Let the chicken cool just slightly (2 min) โ€” larb is served warm, not hot.
