Thai sweet & sour is brighter and less goopy than the American Chinese-takeout version. It's a fresh stir-fry with pineapple, cucumber, and tomato in a light tamarind-based sauce โ barely thickened, definitely not bright red. Thai kids grow up on this dish; it's the gateway Thai food for picky eaters everywhere.
Why this recipe is T1D-friendly
- Pineapple gives natural sweetness so we need way less added sweetener
- Allulose replaces the palm sugar entirely with no glucose impact
- Light sauce (no cornstarch slurry) keeps the carbs in the rice, not the sauce
Ingredients
- 1.5 lbs chicken breast, cut into bite-size pieces (0g)
- 1 tbsp soy sauce (for marinade) (1g)
- 1 tbsp avocado oil + 1 tbsp for stir-fry (0g)
- 1 cup fresh pineapple chunks (or canned in juice, drained) (16g across the batch)
- 1/2 red bell pepper, cut in chunks (3g)
- 1/2 green bell pepper, cut in chunks (3g)
- 1 small cucumber, seeded and chunked (3g)
- 1 small tomato, cut in wedges (4g)
- 1/2 small onion, cut in chunks (4g)
- 3 cloves garlic, minced (2g)
Sweet & sour sauce
- 3 tbsp rice vinegar (0g)
- 2 tbsp ketchup (low-sugar or sugar-free) (4g)
- 2 tbsp soy sauce (2g)
- 2 tbsp allulose (replaces palm sugar) (0g)
- 1 tsp fish sauce (0g)
- 2 tbsp water (0g)
- 1 1/3 cups cooked jasmine rice (~75g across all servings)

Stir-fry alone per serving: ~7-8g (mostly pineapple + veg). Kid default = 8g + 15g rice = ~23g total. Smaller pineapple portion brings it down to ~16g.
Directions
- Toss chicken pieces with 1 tbsp soy sauce. Let sit 10 min.
- Whisk all sauce ingredients in a small bowl. Set aside.
- Heat 1 tbsp oil in a wok over high heat. Add chicken in a single layer.
- Sear 2 min per side without moving, then stir-fry 2-3 more min until cooked through. Remove to a plate.
- Add remaining oil. Add onion and garlic, stir-fry 1 min.
- Add bell peppers, stir-fry 2 min until tender-crisp.
- Add cucumber, tomato wedges, and pineapple. Stir-fry 1 min.
- Add chicken back to the wok. Pour in the sauce.
- Toss everything for 1-2 minutes until sauce coats and lightly reduces. Veggies should still have bite.
- Portion 1/3 cup rice per kid bowl. Spoon stir-fry over top.

- This is the "trojan horse" Thai dish for picky kids โ it tastes familiar (sweet + sour) but introduces Thai flavors gently
- Use sugar-free ketchup (G Hughes, Primal Kitchen) to drop carbs further without losing the tang
- Fresh pineapple > canned every time โ but if you use canned, get the kind packed in juice, not syrup
- Skip the chili entirely; this dish doesn't need it for kids
