Stir-fry alone per serving: ~7-8g (mostly pineapple + veg). Kid default = 8g + 15g rice = ~23g total. Smaller pineapple portion brings it down to ~16g.

Directions

  1. Toss chicken pieces with 1 tbsp soy sauce. Let sit 10 min.
  2. Whisk all sauce ingredients in a small bowl. Set aside.
  3. Heat 1 tbsp oil in a wok over high heat. Add chicken in a single layer.
  4. Sear 2 min per side without moving, then stir-fry 2-3 more min until cooked through. Remove to a plate.
  5. Add remaining oil. Add onion and garlic, stir-fry 1 min.
  6. Add bell peppers, stir-fry 2 min until tender-crisp.
  7. Add cucumber, tomato wedges, and pineapple. Stir-fry 1 min.
  8. Add chicken back to the wok. Pour in the sauce.
  9. Toss everything for 1-2 minutes until sauce coats and lightly reduces. Veggies should still have bite.
  10. Portion 1/3 cup rice per kid bowl. Spoon stir-fry over top.
