*Phở gà* is the gentler cousin of beef phở — a cold-morning hug in a bowl that Vietnamese families eat for breakfast, lunch, or "I'm sad and need something warm." In Vietnamese-American homes, phở pots simmer on Sunday and feed everyone through the week. Nobody makes ½ cup of phở — you make a stockpot full.   1. Char the ginger and onion: place cut-side down in a dry pan over high heat for 4-5 minutes until blackened in spots. This is the secret to that "real phở" flavor.
  2. Toast star anise, cinnamon stick, and cloves in the same pan for 1 minute until fragrant.
  3. Combine broth, charred ginger, charred onion, and toasted spices in a large stockpot. Bring to a simmer.
  4. Simmer uncovered for 30 minutes — your kitchen will smell amazing.
  5. Strain the broth and discard solids. Return broth to pot, stir in nước mắm and monk fruit. Taste — adjust salt until it sings.
  6. Meanwhile, cook rice noodles per package — usually 4-6 minutes in boiling water. Drain and rinse with cold water to stop cooking.
  7. Set up your toppings bar: shredded chicken, herbs, sprouts, lime, jalapeño all in little bowls.
  8. Build each bowl at the table: measure noodles (use a ¼- or ⅓-cup measure for portion accuracy), top with chicken, ladle hot broth over.
  9. Let your kid pick their own herbs and toppings — phở is participatory.
