  1. Make the marinade: in a bowl, mix lemongrass, garlic, shallot, fish sauce, soy sauce, monk fruit, turmeric, and black pepper.
  2. Add chicken, toss to coat. Marinate at least 20 minutes — overnight is even better.
  3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add chicken in a single layer (work in batches if needed — overcrowding = steam, not sear).
  5. Cook undisturbed for 3 minutes until golden on the bottom. Flip and cook another 3 minutes.
  6. Add remaining oil and scraped-up marinade bits, stir-fry 2 more minutes until chicken is fully cooked and edges are caramelized.
  7. Off heat, squeeze lime juice over the top. Taste — should be salty, savory, lightly sweet, lemongrass-forward.
  8. Serve over rice (or cauli rice) with cilantro, scallion, and a wedge of lime.
